Perfectly Paleo Fall Feast: A Complete Thanksgiving Menu

The fall chill is upon us, but warm up your taste buds, because we have a Paleo fall recipe line up just in time for your Thanksgiving spread. It is sure to give you all the feels (other than anxiety) as we have gladly done the work for you, and it is good, folks (Bacon pecan pie good, people. I repeat - in a wide-eyed whisper - bacon pecan pie.)
Each year I lament the passing warmth of summer to fall with the whispers of winter not far behind. It has always been a difficult transition for me, but the past two years it has come alive for my family and I as we have adventured North to see the changing of the leaves and the beauty of fall in all it's glory. I had only read about or viewed such sites in photographs. It's real, and it's stunning!
This said, I've come around to true appreciation and even gratitude, especially as I remember the warmth that is in the colder months - warm fires, warm drinks, warm bubbly pies (like bacon pecan pies!), warm gatherings, friends & full tables + memories. As many of you know (but if you don't - read here), several years ago I changed my diet from what many would consider a traditional American, mostly healthy diet, to a predominantly paleo/Whole30 approach to cooking + dining.
Much like my summer to fall transition, I did it with lamentations. As a foodie, I felt as if all the warmth and comfort of food was being taken from me and replaced with grey semi-satisfactory options. While I found myself frustrated and wanting for a bit, I was determined (and decidedly stubborn) to make or find options that were just as good if not better than what I felt I was missing. I am so glad! I mean it. I am overjoyed at the transition of my body, mind, and spirit in the midst of rediscovering health, healing, and food that nourishes my very being rather than depleting it.
I'm still a foodie, friends, and it is utterly delightful to share what I find along the way. There are some incredible food bloggers out there, with amazing recipes, but sometimes it is hard to pick the winners out of the crowd, is it not? Large Batch Cranberry Sauce
Large Batch Paleo Cranberry Sauce

Yield: Multiple Jars- Enough to give away + keep for your tribe
Ingredients:
- 3lbs Cranberries
- 1 1/4 cup Maple Syrup
- 1 cup Coconut Sugar
- 1 cup Collagen Peptides
- 1⁄2 cup Filtered Water
- 1⁄4 cup Ghee
- Juice of 1/2 a Lemon
- 2 tsp Cinnamon (heaping)
- 1 tsp Ground Cloves (fresh ground recommended)
- 1 tsp Fresh Nutmeg
- 1/2 tsp Cardamom
- 1/2 tsp Himalayan Salt
- 2 tsp Fresh Grated Ginger
- Sprig of Thyme (optional)
Instructions:
Cook berries with water, ghee, salt and lemon until berries break and sweat. Stir + add spices; cook further on medium heat. Add all other ingredients and cook down on low. Stir occasionally. Let cool. Blend with immersion blender or regular blender. Place in desired assorted jars. Keep refrigerated for up to 4 weeks sealed after use or up to 8 weeks sealed without use. (In other words, you may have just made enough for Thanksgiving and Christmas. However, ours never makes it that long. Every jar is emptied or gifted within 2 weeks max!)
