Tangy Paleo Coleslaw

I cannot help but feel a sense of pride when someone takes a bite of my coleslaw and utters "Wow, this is good! I never like coleslaw." Listen, in the South, there are bragging rights to coleslaw, potato salad, sweet tea, and peach cobbler. I'll take it!
The recipe is simple, but the thing that makes this slaw different from others is the use of quality apple cider vinegar without apology. You will almost always use more than you may think, but nonetheless, it is easier to add rather than take away, so start with the minimal portions and increase. Just remember, when you taste your slaw and it needs adjustment, ask yourself whether it needs to be smoother (add mayo), tangier (add ACV), sweeter (add honey), or saltier. It may need more than one thing, but with a little love, it will be brag worthy. ;)

Tangy Paleo Coleslaw

Yield: 8-12 Serving
Ingredients:
Coleslaw for Gathering:
- 1 sm to md Cabbage Head, finely chopped or shredded (I like to use half purple cabbage + half regulard cabbage for more color)
- 1 c. Shredded Carrots
- 1/2 c. Raisins (optional, but trust me)
- 1/2 c. Organic Roasted Pumpkin or Sunflower Seeds
- 1/4 c. Hemp Hearts
Dressing:
- 1 c. Mayo (we like Veganaise, Just Mayo, or Primal Mayo)
- 1/4 - 1/2 c. Organic Apple Cider Vinegar (with "the mother")*
- 2-6 T Honey to taste*
- 1 T. Dijon Mustard
- 1 t. Garlic Powder
- 1 t. Onion Powder
- 1/2 t. Celery Seed
- 1/2 t. Mustard Powder
- 1 t. Pepper
- 1 t. Salt to taste
Instructions:
Put all of the dressing ingredients in a mason jar. Shake. (*Remember it is easier to add to a recipe rather than take away. Therefore, I recommend suggest using the smaller recommendations of the honey and ACV in your dressing. After mixing with the fresh ingredients, you can decide whether to add more sweet and/or tang.) Put all of the other ingredients in a large bowl and mix lightly; pour dressing over fresh ingredients. Mix well. Add more salt and pepper to taste, if needed. Serve chilled or room temperature. You can make a day ahead and refrigerate; leftovers can be stored for 3-5 days.
