Paleo Key Lime Pie

This Paleo Key Lime Pie recipe is straight from the delicious genius of my friend and culinary professional, Rachel Heppel. As many may know she now serves as our resident HIVEhomemade culinary consultant and specializes in making amazing recipes that serve our essential needs and/or preferences such as gluten, grain, sugar, and dairy free treats. I know for many that may sound so dull and inhibiting, but for those who have made these dietary changes for healthy or allergy purposes, you know how utterly delightful it is to find a delicious recipe that makes you say "MMMM” and “Hallelujah!"
That is exactly what I said upon first bite when she shared this recipe with me. I lost my mind for a little bit and had a spiritual moment. I haven't had a key lime pie that made me this happy in years! I could keep gushing (like the day I took my first bite), but I am going to turn it over to Rachel and let her share how + why she came up with an awesome recipe.

Hey, All! I’m Rachel, and let me take minute to give you a little back ground about myself, before we dive into this delicious recipe. I've been reconstructing recipes around dietary restrictions, personally and professionally, for the past 8 years. It all started when my best friend was diagnosed with several food allergies, intolerances, and sensitivities, leaving her very disappointed, discouraged, and also a little devastated. I made it my mission to recreate her favorite recipes sans gluten, dairy, eggs, sugar, and grains so that she wouldn't feel like she was missing out and limited to eating sad salads and crappy crudites. Shortly after, I was diagnosed with similar food restrictions myself, but luckily I was already well versed in how to cook and bake with alternative ingredients. I love being able to help those with food restrictions find joy in foods they didn't think they'd ever be able to enjoy again, including this Key Lime Pie!
It's tart, but won't make your face pucker. Sweet, but not cringingly so. It's a creamy citrusy custard atop a crunchy cinnamon crust. And when served frozen, it's the best cold treat to beat the heat during your perfect paleo summer gathering. It's free of grains, gluten, dairy, sugar, and eggs, but BEST of ALL its so delicious you won’t even believe you’re missing a thing!
Paleo Key Lime Pie

Yield: 1 Pies
Crust:
Ingredients:
- 1 T Flax Meal
- 2 1⁄2 T Warm Water
- 3⁄4 cup Coconut Sugar
- 1⁄2 cup Palm Shortening or Coconut Oil, Melted
- 1 cup Cassava Flour
- 1⁄2 t Baking Soda
- 1⁄4 t Salt
- 1⁄4 t Cinnamon
Instructions:
In a small bowl, combine flax meal and water together and then set aside for about 5 minutes. In a large mixing bowl, combine all remaining dry ingredients together and then add your flax meal mixture and melted oil. Mix well with a rubber spatula until a dough forms. Grease a pie pan with avocado oil (or any oil that is liquid at room temp) and then evenly press the dough into the pie pan, making sure to go all the way up the sides. Bake at 350° for about 10 minutes, or until the crust is golden brown and set. Allow the crust to fully cool before pouring in the filling.
Key Lime Pie Filling:
Ingredients:
- 1 cup Cashews - soaked in hot water for 4hrs-12hrs, then drained and rinsed
- 3⁄4 cup Coconut Oil, Melted
- 1⁄3 cup Coconut Milk, Canned/Full Fat
- Zest of 2 limes (zest your limes before juicing them!)
- 1⁄2 cup Lime Juice
- 1⁄3 cup Agave (or honey or maple syrup)
- 1⁄2 T Vanilla Extract
- 1⁄4 t Salt
Instructions:
Combine all ingredients together in a Vitamix (or other) blender until completely smooth and creamy - this may need to be done in a couple of batches, depending on the size of your blender. Scrape down the sides of the blender several times during processing to ensure a smooth product. Once filling is completely smooth, pour into your cooled crust and freeze to set. Top with a healthy portion of coconut whipped cream and berries! Store refrigerated or frozen.
